Prep Time: 10 minutes
Cook Time: 55 minutes
Total Time: 1 hour 5 minutes
Servings: 10 slices

Ingredients

  • 3 ripe bananas (about 1 ¼ cups mashed)
  • ½ cup (115 g) unsalted butter, melted
  • ¾ cup (150 g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups (190 g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp ground cinnamon (optional, for warmth)
  • ½ cup (120 ml) sour cream or plain Greek yogurt (for extra moisture)
  • Optional add-ins: ½ cup chopped walnuts, pecans, or chocolate chips

Directions

  1. Preheat the Oven:
Set your oven to 350°F (175°C) and grease a 9×5-inch loaf pan (or line with parchment paper).
  2. Mash the Bananas:
In a large mixing bowl, mash ripe bananas with a fork until mostly smooth.
  3. Mix Wet Ingredients:
Add melted butter, sugar, eggs, vanilla, and sour cream (or yogurt). Whisk until well combined.
  4. Add Dry Ingredients:
Sift in flour, baking soda, salt, and cinnamon. Gently fold with a spatula until just combined — don’t overmix!
  5. Add Optional Mix-ins:
Fold in nuts or chocolate chips if using.
  6. Bake:
Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool & Serve:
Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack. Slice and enjoy warm, or store airtight for up to 4 days.
