🧂 Ingredients
For the Birria Beef:

2 lbs beef chuck roast, cut into large chunks

2 dried guajillo chiles, stemmed and seeded

2 dried ancho chiles, stemmed and seeded

1 chipotle pepper in adobo sauce (plus 1 tbsp of the sauce)

1 tsp dried oregano

1 tsp salt

½ tsp black pepper

1 cinnamon stick

2 cups beef broth

1 tbsp apple cider vinegar
For the Bowl:

2 cups cooked white rice or quinoa

1 cup shredded cheese (optional: Oaxaca, Monterey Jack, or mozzarella)

1 cup diced tomatoes or pico de gallo

½ cup diced red onion

¼ cup chopped cilantro

Toast and Soak the Chiles:
In a dry skillet over medium heat, toast the dried guajillo and ancho chiles for 1–2 minutes until fragrant. Place them in hot water to soak for 10 minutes, then drain. -
Blend the Sauce:
Add soaked chiles, chipotle pepper, adobo sauce, onion, garlic, cumin, paprika, oregano, vinegar, and 1 cup of broth to a blender. Blend until smooth. -
Brown the Beef:
In a large pot or Dutch oven, heat oil over medium-high heat. Brown beef chunks on all sides, about 2–3 minutes per side. Remove and set aside. -
Simmer the Birria:
Pour the blended sauce into the pot. Add remaining broth, cinnamon stick, salt, and pepper. Return beef to the pot, cover, and simmer on low for 2–2½ hours, until the meat is fall-apart tender. -
Shred the Beef:
Remove the beef and shred it using two forks. Strain the broth (consommé) if desired for a smooth texture. -
Assemble the Bowls:
Divide rice or grains among bowls. Top with shredded birria beef, a drizzle of consommé, cheese, tomatoes, onion, and cilantro. -
Serve & Enjoy:
Garnish with lime wedges and an extra ladle of consommé for dipping or drizzling.
